About Us
Based in Honiton, Devon, Montgomery’s Coffee has been selling its own brand coffee beans to the trade since
2005. The Business has rapidly earned an excellent reputation for its great tasting coffee. The press and media have shown
considerable interest with a feature in the local BBC Spotlight News programme and an article in The publican in June 2009.
Montgomery’s was also nominated in 2009 for The Best Beverage Award.
How
we do it...
First, select the finest beans
The two main categories of coffee
beans are ‘Arabica’ and ‘Robusta’. Only Arabica beans will find their way into the gourmet cup. There
are many different Arabica varieties offering a wonderful palette of flavours. They can be used as a single variety or blended
to produce wonderful shades of strength, body and flavour. Robusta beans belong at the cheaper end of the taste spectrum being
characterised by a bitterness, musty flavour and less body. They are often blended with Arabica beans to‘soften’
the edges – but one taste – and the game is up! South America and Africa are the main coffee producing nations.
Each country and each region produces coffees with very different flavour characteristics. The finest tasting coffees that
we all aspire to are grown with care and pride by small communities that care passionately about the coffee they produce.
The cream of the crop are grown at high altitude and consequently command high prices. High altitude coffees are thought to
contain more of the substances that make coffee so complexly flavorful. Montgomery’s coffee is Fairly Traded which means
that our producers get a proper price for their coffee to help sustain their communities and improve the way they manage their
crops and land. Arabica coffee beans contain lower levels of both caffeine and chlorogenicacids, which are partly responsible
for bitterness and astringency in coffee.
Then
create the perfect blend
Our quest was to produce a blend of coffee beans that would produce
a consistently smooth flavour with a tantalizing aroma – and not a trace of bitterness. The Montgomery’s blend
is 100% Arabica with beans selected from Columbia and Ethiopia. It’s the ratio we use that produces the magic –
and that is our secret!
Finally, roast
very slowly
We medium roast our beans…Medium roasted coffee has less
soluble solids, a higher acid content, and a potent aroma when compared to darkly roasted coffee. All of these factors are
known to reduce perceived bitterness. Most companies that roast beans in this country ‘flashroast’ them. This
is a high volume roasting technique that roasts hundreds of kilos of green coffee within 30-90 seconds. It’s a much
cheaper process than slow roasting – and results in inferior coffee. Our coffee beans are roasted very, very slowly
and the result is a great flavoured coffee that is not at all bitter. Montgomery’s unique blend guarantees that each
deliciously smooth cup is followed by one that is just as perfect.
